Marinated and Barbecued Chicken

    When the BBQ is fired up this is a great chicken option with the chicken marinated in a unique combination including coconut milk, garlic, whisky and fish sauce.

    Serves: 4 

    • 1 chicken, cut up to your liking
    • 2 tablespoons whiskey
    • 1/2 cup (125ml) coconut milk
    • 2 tablespoons fish sauce
    • 1 teaspoon salt
    • 2 teaspoons curry powder
    • 2 tablespoons sugar
    • 5 garlic cloves, finely crushed or pounded
    • 4 coriander roots, finely diced or pounded
    • 1/2 teaspoon white pepper, ground
    • 2 tablespoons vegetable oil

    1. Put the chicken in a non-reactive marinating container.
    2. Mix the remaining ingredients to a strong tasting marinate. Taste and make sure it tastes a bit too strong for your liking. Adjust the seasonings according to whether you prefer more salty or sweet.
    3. Pour the marinade over the chicken, massage in well, cover container and leave in the fridge for at least 2 hours; preferably overnight.
    4. Barbecue the chicken over medium hot coals until browned and cooked thoroughly; about 30 minutes total.
    5. Serve right off the barbecue or at room temperature.
