Baked Coconut Custard

I frequently make this basic coconut custard that is baked in an oven then put under the grill to get a rich brown top.


Serves: 6 

  • 1 1/2 cups (375ml) coconut milk
  • 5 eggs, whisked
  • 3/4 cup (125g) brown sugar
  • 1/3 cup (90g) white sugar
  • 2 tablespoons cream

Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

  1. Preheat the oven to 180 degrees C.
  2. In a steel or ceramic bowl combine coconut milk, eggs, brown sugar, white sugar and cream.
  3. Put the bowl over a double boiler and cook until the custard coats the back of a spoon; about 10-20 minutes.
  4. Pour the custard into a 22cm square tin and bake for about 30 minutes or until the custard is done.
  5. Place under a grill until the top is golden brown. Let cool and cut into squares.
