Rice Pudding with Lychees

    This is a simple to make Thai rice pudding that incorporates lychees and is served with coconut cream.

    Serves: 4 

    • 400g glutinous rice
    • 5 cups (1.25 litres) water
    • 1 drop jasmine essence
    • 1 2/3 cups (400g) white sugar
    • 10-15 fresh or tinned lychees or longans, peeled and seeded
    • 1 cup (250ml) coconut cream
    • 1/2 teaspoon salt

    1. Wash the rice twice and place in a saucepan. Add the water, jasmine essence and cook over medium heat until the rice is tender. The rice will appear moist still.
    2. Add the sugar and cook until dissolved. Add the lychees or longans and bring to a boil. Turn off the heat.
    3. In a separate saucepan heat the coconut cream and salt together. Do not boil. Remove from the heat.
    4. To serve; place the rice and fruit in individual bowls and top with a tablespoon or two of the coconut cream.
