Bananas Stewed in Coconut Milk

    This Thai dessert consists of bananas slowly being stewed in a sweetened coconut milk until soft then served warm.

    Serves: 6 

    • 10 small bananas or 4 large bananas
    • 1 cup (250ml) coconut milk
    • 1 cup (220g) sugar
    • 1 teaspoon salt
    • 1/2 cup (125ml) coconut cream

    1. Cut the bananas in half longwise then in half again to get 4 pieces. If using large bananas, cut in half then cut into 5 cm lengths.
    2. In a saucepan cook the coconut milk until it boils.
    3. Add the bananas and cook gently until soft.
    4. Add the sugar and salt. After the sugar dissolves add the coconut cream.
    5. Remove from heat and place in a bowl. Serve the bananas and sauce warm.
