Stir Fried Chilli and Basil Prawns

    This is a really quick dish to make once the marinating is done, it is also great cooked on the barbecue.

    Serves: 4 

    • 500g large prawns
    • 1 pinch salt, sugar and pepper, to taste
    • 6 fresh basil leaves, diced
    • 1 clove garlic, crushed
    • 1 tablespoon olive oil
    • basil leaves, to garnish
    • 1 red chilli, cut in half lengthways and deseeded

    1. Wash the prawns, remove shell, devein and pat dry. Soak prawns in ice cold water and ice cubes with some salt for 1 hour. Drain.
    2. Take half of the chilli and mince. Slice the other half into strips.
    3. Marinate the prawns with salt, sugar, pepper, diced basil, garlic and minced red chilli for 10 minutes.
    4. Heat olive oil in a wok. Stir fry prawns for 5 minutes or until cooked. Mix in chilli strips.
    5. Garnish with some fresh basil leaves. Serve with rice or noodles.
