    This is a very good looking meal with the mussels opened and arranged on the serving plate then the hot black bean sauce poured over the top.

    Serves: 4 

    • 1 kg mussels
    • oil, for cooking
    • 2 garlic cloves, crushed
    • 1.5 cm ginger, grated
    • 2 stalks spring onions, finely diced
    • 1 fresh red chilli, deseeded and diced
    • 1 tablespoon black bean paste
    • 1 tablespoon soy sauce
    • 1 tablespoon Shaoxing rice wine
    • 2 tablespoons mussel juice or water
    • 1 pinch of sugar and pepper, to taste

    1. Clean the mussels under cold water and remove beards. Discard the dead and broken ones. Place mussels on a dish in a steamer and steam until they are opened.
    2. Heat a little oil in frypan and saute the garlic, ginger, spring onions, chilli and black beans.
    3. Stir and add the soy sauce, rice wine, mussel juice and season. Bring to a boil, lower heat and simmer for 1 minute.
    4. When mussels are cooked, discard the top shell and arrange on serving platter.
    5. Pour the sauce over the mussels and serve hot.
