Fried Chicken with Soy and Lime Sauce

    This is an Asian version of fried chicken and gravy. The chicken is marinated then deep fried before being covered in a soy sauce and lime sauce.

    Serves: 4 

    • Fried Chicken
    • 1 (2kg) chicken, cut into small pieces
    • 1 teaspoon ground pepper
    • 1 teaspoon dark soy sauce
    • 1 teaspoon salt
    • 1 teaspoon sugar
    • oil, for frying
    • Sauce
    • 1/4 cup (60ml) water
    • 1/4 cup (60ml) dark soy sauce
    • 3 limes, juiced
    • 1 pinch salt and pepper, to taste

    1. Fried Chicken: In a large bowl combine the chicken with the pepper, dark soy sauce, salt and sugar. Marinate for about 30 minutes.
    2. In a large wok, heat the oil until hot and deep fry the chicken pieces until golden brown. Drain on paper towels.
    3. Sauce: In a small saucepan mix the water and dark soy sauce then bring to a gentle boil.
    4. Add the lime juice and season with salt and pepper to taste.
    5. Pour the sauce over the fried chicken and serve immediately with rice.
