    This is a popular Malaysian Sambal known as 'Sambal Ikan Bilis' that uses fried dried anchovies, dried chillies and belacan.

    Serves: 6 

    • 150g dried anchovies
    • 4 shallots
    • 8 dried chillies, soak in hot water discard seeds
    • 1 clove garlic
    • 2cm belacan, toasted
    • cooking oil
    • 1 large onion, sliced into rings
    • 2 tablespoons tamarind juice
    • 1 pinch salt, to taste
    • 1 pinch sugar, to taste

    1. Fry the dried anchovies until crispy, drain and set aside.
    2. Blend the shallots, chillies, garlic and belacan together until fine.
    3. Heat a little oil in frypan and fry the blended spice ingredients until fragrant.
    4. Add the onion rings and stir well for a few minutes until the onion softens a little.
    5. Add tamarind juice, salt and sugar.
    6. Cook until the sauce thickens and then add the crispy fried anchovies.
