These are a great dessert or snack that I like to make from time to time. The bananas are generously covered in a rice and tapioca batter then deep fried.


Serves: 8 

  • 125g rice flour
  • 25g tapioca flour
  • 100ml water
  • 1/4 teaspoon salt
  • 10 bananas
  • 2 cups (500ml) oil for deep frying

  1. Make the batter by combining the rice flour, tapioca flour, water and salt. Mix until smooth and lump free.
  2. Cut the bananas into 2cm slices or halve them lengthwise.
  3. In a wok or saucepan heat the oil until very hot. Dip the banana pieces into the batter and scoop into the hot oil with a generous amount of batter.
  4. Fry until golden on all sides then drain on paper towels. Eat immediately.
