These are a great dessert or snack that I like to make from time to time. The bananas are generously covered in a rice and tapioca batter then deep fried.
125g rice flour
25g tapioca flour
1/4 teaspoon salt
2 cups (500ml) oil for deep frying
- Make the batter by combining the rice flour, tapioca flour, water and salt. Mix until smooth and lump free.
- Cut the bananas into 2cm slices or halve them lengthwise.
- In a wok or saucepan heat the oil until very hot. Dip the banana pieces into the batter and scoop into the hot oil with a generous amount of batter.
- Fry until golden on all sides then drain on paper towels. Eat immediately.
