This is a special rice that has a unique flavour that comes from the evaporated milk, tomato paste, anise, cardamom and cloves.


Serves: 6 

  • 2 tablespoon ghee
  • 2 star anise
  • 4cm cinnamon stick
  • 3 cardamoms
  • 2 cloves
  • 1 cup (250ml) water
  • 1 tablespoon tomato paste
  • 1 (400g) tin evaporated milk
  • 1 pinch salt to, taste
  • 2 cups long grain rice, wash and drain
  • fried shallots for garnish
  • 2 stalks spring onions, diced

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Heat ghee in saucepan and fry the spices until fragrant.
  2. Add in the water and bring to boil.
  3. When boiling stir in the tomato paste, evaporated milk, salt and rice. Lower heat and cook rice until done.
  4. Garnish with fried shallots and diced spring onions.
