Malaysian Coconut Rice

    This is a traditional Malaysian coconut rice known as 'Nasi Lemak' where it is eaten as breakfast but is also a lunch or dinner.

    Serves: 4 

    • 1 cup jasmine rice
    • 2 shallot
    • 2 cups (500ml) coconut milk
    • 1 slice ginger
    • 2 pandan leaves
    • 1 pinch salt, to taste
    • Traditional Accompaniments
    • 1 small cucumber, peeled and sliced
    • 50g whole peanuts, dry roasted
    • 2 eggs, whisked and fried
    • 100g dried anchovies, fried crispy

    1. Wash rice and drain.
    2. Slice the shallots and put in saucepan with the rice. Add the coconut milk, ginger slice, pandan leaves and salt. Mix and cook until the rice is done.
    3. Serve rice in the centre of a plate and arrange the traditional accompaniments around the dish.
