Anchovy Fried Rice

    I always cook extra rice so I can use the leftovers the next day to make fried rice. This is a great little recipe - very simple and tasty.

    Serves: 2 

    • 3 tablespoon cooking oil
    • 100g dried small anchovies
    • 5 garlic cloves, crushed
    • 5 shallots, sliced thinly
    • 1 tablespoon black bean chilli paste
    • 2 cups cooked rice
    • 1 pinch salt and pepper, to taste
    • 1 egg, fried

    1. Heat oil in saucepan and saute the dried anchovies until it is slightly crispy.
    2. Add the garlic and shallots then stir for a few minutes.
    3. Add the black bean chilli paste and stir until fragrant.
    4. Crumble the leftover cooked rice so it is not too lumpy. Add a little rice at a time to the saucepan stirring and incorporating all the ingredients together.
    5. Season with salt and pepper the serve the rice hot and top with fried egg.


    Instead of topping it with a fried egg you can add a whisked egg into the sauce then scrambling it before stirring into the rice.
