In a mortar and pestle smash the black peppercorns until roughly ground then add the garlic cloves and smash until well broken up. Add the coriander root and continue to smash until fairly smooth. Mix in the salt.
Mix in with the pork and marinate for 4 hours.
Fry the pork in oil until crispy then drain. Serve on a plate with the coriander sprigs on top.
