This is a simple Malaysian stir fried prawns and noodles meal known as 'Mee Siam'. I like the small things about this dish like the bean shoots and garnishing lime.

2 eggs, whisked
2 large onions, sliced
30g soy bean paste
600g fresh prawns, shelled an deveined
350g bean sprouts, remove tails
3 stalks Chinese chives, cut into 3 cm length
500g rice vermicelli , soaked in water until soft, then drained
