Lemon and Soy Chicken

    This is a great chicken dinner using a lemon, soy, garlic and ginger sauce to gently cook the bone in chicken thighs.

    Serves: 4 

    • 4 cloves garlic, crushed
    • 2cm piece ginger, grated
    • 3 tablespoons brown sugar
    • 2 tablespoons white sugar
    • 1/2 cup (125ml) Japanese soy sauce
    • 2 tablespoons water
    • 1 large lemon, juiced
    • 8 bone-in chicken thighs

    1. Combine all the ingredients except the chicken in a large frying pan that can hold all the pieces in one layer. Heat over medium heat until the sugars dissolve.
    2. Add the chicken skin-side down and cook for 3 to 4 minutes.
    3. Reduce the heat to medium-low and simmer for 30 minutes, flipping halfway or until the chicken is cooked through.
    4. Serve with rice and your favourite stir fried veggies.
