Malaysian Coconut Gravy

    This Malaysian coconut gravy known as 'Kuah Tumis' is a great sauce for meats and vegetables or you could even use it to poach meat in.

    Serves: 8 

    • 10 shallots
    • 5cm ginger
    • 1cm belacan, roasted
    • 1 1/2 cup (375ml) lite coconut milk
    • 2 stalks lemongrass bulbs, bruised
    • 3 tablespoons chilli paste
    • 1 slice dried tamarind
    • 1 cup (250ml) coconut milk
    • 1 pinch salt and sugar, to taste

    1. Mix shallots, ginger and belacan in blender then grind until fine.
    2. Put the lite coconut milk in a saucepan and add the lemongrass, chilli paste and tamarind. Simmer for 20 minutes stirring occasionally.
    3. Add the coconut milk, salt and sugar. Continue simmering until it thickens.
    4. Adjust seasoning and add more sugar if it is too spicy. Serve.
