Green Bean Scrambled Eggs

    This is a savoury scrambled eggs that features green beans, it also contains shallots, garlic, soy sauce and optionally chillies. I makes a great brunch but can also be used as a side dish.

    Serves: 4 

    • 200g green beans
    • 2 eggs
    • 2 teaspoons soy sauce
    • 1 pinch salt and pepper, to taste
    • oil for cooking
    • 5 shallots, sliced
    • 2 garlic, crushed
    • 1/2 red chilli, sliced diagonally, optional

    1. Clean beans and slice diagonally into 6cm length.
    2. Whisk eggs with soy sauce, salt and pepper. Do not add salt if the soy sauce is salty.
    3. Heat oil wok and stir-fry the shallots and garlic until fragrant. Add the beans and sliced red chillies then stir.
    4. Pour in the egg mixture and scramble all the ingredients quickly. Cook until the egg is medium soft or according to your taste.

    This was OK. The green beans over powered the eggs. I think it would be better with 100g green beans and 3 eggs with 3 teaspoons of soy sauce.  -  24 May 2013
