Grilled Eggplant with Soy Citrus Glaze

    This is a delightful way to cook Eggplant with a glaze/marinade that includes soy sauce, honey, orange juice, lime juice and mirin.

    Serves: 4 

    • 3 tablespoons soy sauce
    • 2 tablespoons mirin or sherry
    • 2 tablespoons water
    • 1 tablespoon honey
    • 50ml orange juice
    • 25ml lime juice
    • 1 tablespoon ginger, finely diced
    • 4 Asian eggplants, trimmed and halved longwise
    • 1pinch salt and freshly ground pepper, to taste
    • toasted sesame seeds, to serve

    1. Position a rack in the upper part of the oven and preheat the grill. Line a grill tray with foil.
    2. Combine the soy sauce, mirin, water, honey, orange juice, lime juice and ginger in a saucepan and simmer for about 5 minutes or until well blended. Let cool.
    3. Lightly score a diamond-like pattern into the flesh of the eggplant. Season with salt and pepper to taste and brush with soy sauce marinade.
    4. Place the eggplant halves skin-side up on the prepared tray.
    5. Grill for 3 to 4 minutes on each side, basting with the marinade often. Sprinkle with sesame seeds and serve.
