    This is a unique Korean dish called 'Gaeran Jim' which is best described as a dairy free savoury custard. Eggs are whisked with water then set in a double boiler.

    Serves: 1 

    • 3 cups (750ml) water
    • 2 eggs
    • 1/4 teaspoon salt
    • 1 small piece spring onion, garnish
    • 2 small pieces carrot, garnish

    1. Boil the water in 20-23cm saucepan which will fit glassware for custard.
    2. Put eggs and salt in the glassware (or a big coffee mug that will fit in the saucpan) and pour 1 cup (250ml) of boiling water slowly in, whisking with a fork.
    3. Use a spoon to remove all the bubbles from the top of the eggs.
    4. Place the glassware gently into the saucepan then cover the eggs (if using a coffee mug use a small plate as a lid) and put the lid on the saucepan.
    5. Double boil for 10 minutes on medium heat. Garnish with spring onion and carrot on top of the eggs.
