Tomato and Egg Scramble

    This is a simple scrambled egg with garlic and tomatoes. It makes a great brunch but I have also eaten in for lunch or a light dinner.

    Serves: 2 

    • 4 eggs
    • 3 cloves garlic, diced
    • 1 pinch salt, to taste
    • 3 tablespoons oil
    • 4 tomatoes, cut into 6-8 wedges

    1. Whisk the eggs lightly and add 1 clove of garlic and salt.
    2. In a wok heat 2 tablespoons oil and stir in the egg mixture. Cook until it just sets. Remove and set aside.
    3. Add the remaining oil and garlic to the wok and fry the tomatoes until they start to wilt.
    4. Return the egg to the wok and mix everything together stirring and cooking for a few more minutes. Season with salt to taste. Serve immediately.

    I enjoyed this over toast. The method works nicely. However, I cut waaaayyyyy back on the garlic and added hot peppers. Thank you for the recipe.  -  10 Feb 2016
