Peanuts are a great healthy snack alternative but I like something a little different this recipe coats them in a coconut milk, sesame seeds and sugar mixture before deep frying them.
2/3 cup (155g) caster sugar
1/2 cup (125ml) coconut milk
2 teaspoon salt
2 teaspoons sesame seeds
1/2 cup (60g) rice flour
2 cups (300g) raw peanuts
2 cups (500ml) vegetable oil for frying
- Mix the sugar, coconut milk, salt, sesame seeds and rice flour until well combined.
- Coat the peanuts in the coconut milk mixture.
- Heat the oil until hot but not smoking.
- Frying the peanuts in batches. Gently place the peanuts in the oil and fry until brown and crunchy. Drain on paper towel.
