Crunchy Peanuts

    Peanuts are a great healthy snack alternative but I like something a little different this recipe coats them in a coconut milk, sesame seeds and sugar mixture before deep frying them.

    Serves: 6 

    • 2/3 cup (155g) caster sugar
    • 1/2 cup (125ml) coconut milk
    • 2 teaspoon salt
    • 2 teaspoons sesame seeds
    • 1/2 cup (60g) rice flour
    • 2 cups (300g) raw peanuts
    • 2 cups (500ml) vegetable oil for frying

    1. Mix the sugar, coconut milk, salt, sesame seeds and rice flour until well combined.
    2. Coat the peanuts in the coconut milk mixture.
    3. Heat the oil until hot but not smoking.
    4. Frying the peanuts in batches. Gently place the peanuts in the oil and fry until brown and crunchy. Drain on paper towel.
