Pork, Prawn, Corn and Spinach Soup

    This is a wholesome soup using pork and prawns with fresh corn straight from the cob and fresh spinach.

    Serves: 4 

    • 4 fresh corn on the cob
    • 1 medium onion, diced
    • 2 cloves garlic, crushed
    • 1 dash olive oil
    • 120g pork, diced
    • 120g prawns, peeled and deveined
    • 1 pinch salt and pepper, to taste
    • 4 cups (1 litre) chicken stock
    • 1 bunch fresh spinach

    1. Prepare the corn by removing all the silk. Slice the kernels from the cob and scrape off the remaining bits and juice.
    2. Saute the onion and garlic in olive oil. Add pork and cook until no longer pink then add prawns. When prawns are cooked, add the corn.
    3. Season with salt and pepper to taste then add the chicken stock. Cook for 10 minutes.
    4. Rinse the spinach by shaking the leaves while in water to get rid of any dirt. Pat dry with paper towel.
    5. Add spinach to the soup and cook until just wilted. Serve hot.

    I sent my message to soon before I was able to complete it about the Corn Soup. I used Cubed Sirloin Steak cuts cut for me from Fresh Market Meat Department instead of using Pork.
