These prawn and corn fritters can be eaten as the main component of a meal or as a side dish or even as a snack.

Serves: 4

  • 1 (400g) tin cream of corn
  • 1 large egg
  • 1/3 cup (90g) plain flour
  • 100g cooked small prawns
  • 1 spring onion, diced
  • 1 pinch salt and white pepper, to taste
  • 1 cup (250ml) oil for frying

Preparation:10min  ›  Cook:20min  ›  Ready in:30min

  1. In a medium bowl combine all the ingredients except the oil. Mix well until there are no more large lumps.
  2. In a large frying pan heat the oil until shimmering. Pour about 4 tablespoons of batter into the hot oil to form a mound about 5cm across. Do not crowd the frying pan and work in batches.
  3. Cook until the fritters are golden brown on both sides; about 8 minutes. Flip halfway through cooking with a slotted spoon or spatula.
  4. Remove from the oil and drain on paper towel. Serve hot.
