Italian Braised Cod

    Cod or any meaty fish fillets work well for this braised dish, with the Italian influences of tomatoes, black olives and fresh parsley. Serve over rice.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 onion, thinly sliced
    • 2 cloves garlic, minced
    • 1 (400g) tin diced tomatoes
    • 1/2 cup (90g) black olives, pitted and sliced
    • handful chopped fresh parsley
    • 1/2 cup (125ml) dry white wine
    • 500g cod fillets

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. In a large frying pan, heat oil over medium heat. Saute onions and garlic in olive oil until softened.
    2. Stir in tomatoes, olives, parsley and wine. Simmer for 5 minutes.
    3. Place fillets in sauce. Simmer for about 5 more minutes or until fish turns white.

    this was really yummy and a nice way to cook fish for a change instead of crumbing or flouring it.  -  21 Jul 2010


    Used different ingredients. I used a tin of the Watties Italian tomatos instead of plain - and a bit of salt ∧ pepper to season. Had no rice, so served with penne pasta.  -  21 Jul 2010


    Altered ingredient amounts. This is a five star recipe -- with the following changes: add 1/2 tsp salt, 1/4 tsp pepper, and italian herbs. Served over brown rice. We all agreed, it was delicious!  -  21 Jul 2008
