Cod or any meaty fish fillets work well for this braised dish, with the Italian influences of tomatoes, black olives and fresh parsley. Serve over rice.

Used different ingredients. I used a tin of the Watties Italian tomatos instead of plain - and a bit of salt ∧ pepper to season. Had no rice, so served with penne pasta. - 21 Jul 2010
Altered ingredient amounts. This is a five star recipe -- with the following changes: add 1/2 tsp salt, 1/4 tsp pepper, and italian herbs. Served over brown rice. We all agreed, it was delicious! - 21 Jul 2008
