Butter Biscuits

    These are very simple butter based biscuits that are quickly made. The cooked biscuit is very soft with a rich buttery flavour.

    Serves: 12 

    • 250g clarified butter
    • 1 1/4 cups (250g) caster sugar
    • 1 pinch salt, to taste
    • 3 1/4 cups (400g) flour
    • 20g caster sugar, to decorate

    1. Melt clarified butter over a low heat and let cool.
    2. Mix the sugar, salt and flour together. Pour in the melted butter into the dry ingredients and mix well. The mixture should be soft. If it is too sticky then add a little bit more flour.
    3. Form into little balls then place on a baking tray. Bake in a 180 degrees C oven for about 20 minutes or when they are done.
    4. Let the biscuit cool then dip the top in sugar to coat. Store in airtight container.
