    This is a healthy and easy to make snack bar containing walnuts, dates and vanilla. We make them for packed lunches and day hikes.

    Serves: 20 

    • 1/2 cup (60g) plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt, optional
    • 2 eggs
    • 1 cup (220g) sugar
    • 1 teaspoon vanilla essence
    • 300g walnuts, diced
    • 450g dates, diced

    1. Sift the flour with the baking powder and salt.
    2. Cream the eggs with the sugar until fluffy and then add the vanilla essence.
    3. Add the nuts and dates then mix thoroughly.
    4. Slowly add the sifted dry ingredients to the wet ingredients and mix well.
    5. Put the mixture into a greased baking tray and bake at 180 degrees C for 45 minutes.
    6. Remove from oven and when slightly cooled, cut into bars.
