Thai Beef Jerky

This is a Thai version of beef jerky known as 'Neuaw Sawan'. The beef is marinated, dried then deep fried before it is ready to eat.


Serves: 6 

  • 1kg beef, sirloin or another lean cut
  • 450ml light soy sauce
  • 10 tablespoons palm sugar
  • 1 teaspoon white pepper, finely ground
  • 4 tablespoons coriander seeds, roughly crushed

Preparation:20min  ›  Cook:1hour  ›  Extra time:2hours marinating  ›  Ready in:3hours20min 

  1. Slice the beef across the grain as thin as possible.
  2. Mix the soy sauce, palm sugar, white pepper and crushed coriander seeds. Heat until sugar dissolves then let cool.
  3. Marinate the beef slices in the marinade for at least a couple hours or overnight.
  4. Dry the drained off pieces of meat on cake racks in the hot sun for about a day or in an oven heated to 150 degrees C for about 1-3 hours depending on thickness until dry and leathery. Turn occasionally.
  5. To serve, cut into smaller pieces then deep-fry.
