Slice the beef across the grain as thin as possible.
Mix the soy sauce, palm sugar, white pepper and crushed coriander seeds. Heat until sugar dissolves then let cool.
Marinate the beef slices in the marinade for at least a couple hours or overnight.
Dry the drained off pieces of meat on cake racks in the hot sun for about a day or in an oven heated to 150 degrees C for about 1-3 hours depending on thickness until dry and leathery. Turn occasionally.
