Sweet Chicken Rice

This is a Filipino chicken and rice dish known as 'Arroz Valenciana' that is made similar to a risotto. Chicken, onion and chorizo is sautéed then the rice is added; instead of stock coconut milk is added then it is cooked until the rice is tender.


Serves: 10 

  • 1 medium onion, diced
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 2 teaspoons paprika
  • 1kg chicken pieces
  • 2 pieces chorizo sausage
  • 200g olives
  • 225g sweet peas
  • 1 pinch salt and pepper, to taste
  • 2 medium tomatoes, diced
  • 230ml water
  • 2 cups (340g) sticky rice
  • 1 (400ml) tin coconut milk
  • 1 red capsicum, sliced longwise
  • 2 hard boiled eggs, sliced longwise

  1. Sauté onion and garlic in olive oil until onion is translucent. Add paprika and mix.
  2. Add chicken, chorizo, olives, sweet peas, salt and pepper then mix thoroughly. Cover and cook 5 minutes.
  3. Add tomatoes then cook for 5 minutes.
  4. Add water then cook another 5 minutes.
  5. Add rice then mix thoroughly, cover and cook for another 5 minutes.
  6. Add coconut milk the boil for another 5 minutes.
  7. Add red capsicum, cover and cook 10 minutes or until the sweet rice is done. Serve hot, garnish with hard boiled eggs.
