Squid in Garlic Broth

    This is a delicate way to cook squid which allows it to retain a lot of its taste. It is served in a broth containing garlic, tomato and soy sauce.

    Serves: 5 

    • 1kg fresh squid
    • 1/2 cup (125ml) white vinegar
    • 1/2 cup (125ml) water
    • 1 pinch salt and pepper, to taste
    • 2 tablespoons olive oil
    • 1 small onion
    • 2 cloves garlic
    • 1 medium tomato
    • 1 tablespoon soy sauce

    1. Clean squid by removing the clear membrane inside.
    2. Place squid in a small saucepan with the vinegar and water, salt and pepper then cook for 10 minutes.
    3. In a saucepan saute onion and garlic. Add tomato, soy sauce and the squid mixture.
    4. Simmer for 20 minutes then serve.
