Coconut Sticky Rice Pudding

This is a very quick and easy rice pudding that uses coconut milk; it is best served with fresh fruit like mangoes.


Serves: 6 

  • 300g sticky rice
  • 2 cups (500ml) water
  • 1 cup (250ml) coconut cream
  • 1 pinch salt, to taste

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Rinse uncooked rice in a colander for at least 2 minutes under plenty of cold running water.
  2. Combine rice, water, coconut cream and salt in a small saucepan. Cover and bring to a boil. Reduce heat to simmer and cook until all liquid has been absorbed.
  3. Cook for 2 more minutes. The rice at the bottom of the saucepan may be a bit browned; that is good and adds flavour.
