Choccy bikkies coated in icing sugar. They're easy to make but look great because, as they cook, the icing sugar cracks. Only cook one tray at a time cos the heat from the top will help the "cracking" process. Allow time for the dough to chill in the fridge.
1/2 cup (85g) unsweetened cocoa powder
1 cup caster sugar
1/2 cup (65ml) vegetable oil
1 teaspoon vanilla essence
1 cup (125g) plain flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup icing sugar

In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
Preheat oven to 180 degrees C. Line baking trays with baking paper. Roll dough into 2cm balls.
Sprinkle the icing sugar into a bowl and roll each ball in it to coat before placing onto prepared trays.
Bake in preheated oven for 10 to 12 minutes. Let stand on the tray for a minute before transferring to wire racks to cool.
