Spiced Fig Slice

    A dried fig slice that is loaded with chopped walnuts then spiced with allspice, cloves and cinnamon. It's best cut into bars then rolled in icing sugar to serve.

    • 3 eggs
    • 200g caster sugar
    • 110g plain flour
    • 1 teaspoon baking powder
    • pinch salt
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon ground cinnamon
    • 1/2 teaspoon ground allspice
    • 1 teaspoon vanilla essence
    • 400g dried figs, diced
    • 120g walnuts, chopped
    • 120g icing sugar, for rolling

    1. Preheat the oven to 160 degrees C. Grease and flour a 23x33cm baking tin.
    2. In a large bowl, cream eggs and sugar until thick and pale. Sift together the flour, baking powder, salt, cloves, cinnamon and allspice; blend into the egg mixture along with the vanilla. Finally fold in the diced figs and walnuts. Pour the batter into the prepared tin and spread evenly.
    3. Bake for 20 to 25 minutes in the preheated oven, until lightly toasted. When cool, cut into squares and roll in icing sugar.

    These were delicious and easy to make! The whole family enjoyed them. I did have to bake them about 10 minutes longer than the recipe stated.  -  29 Sep 2008

    These are pretty good, and a nice change of pace from the usual chocolate chip and oatmeal fare. I did not find that rolling them in icing sugar did anything for the flavour, so I didn't do that after the first one. Very easy and quick to make, also. Thanks!  -  29 Sep 2008
