This meal takes 30 minutes - is easy, easy and looks and tastes fantastic. Dont stint on the black pepper or the garlic and the resulting sauce is fab for dunking.

Serves: 4 

  • 1 kg chicken pieces with skin on or off
  • 1 tablespoon of olive oil
  • 1 tablespoon of salted or unsalted butter
  • salt and pepper to taste
  • 1 cup of good dry white wine
  • 2 handfuls of parsley, thyme, rosemary (or herbs you love)
  • 4 big cloves of garlic, finely chopped

Preparation:8min  ›  Cook:30min  ›  Ready in:38min 

  1. Heat olive oil and butter in a frypan that has a close fitting lid.
  2. Brown chicken really well, then add freshly ground pepper and salt to chicken.
  3. Add wine to deglaze the pan, then turn the heat down to a simmer.
  4. Add herbs and garlic, cover with lid and simmer until chicken is done through.
  5. Serve with lovely French bread and a green side salad.

Drink pairing

A lovely Sauvignon blanc or a lightly wooded Chardonay.

There's nothing like a yummy quick and easy recipe, and this is definately one of them! I used thinly sliced chicken breasts so this took me about 15 minutes to throw together. Will be making this again! - 06 May 2013
