Strawberry Heart Cupcakes

    These are a great cupcake for kids to make mums for mother’s day. They are relatively easy and have a red jam heart and a pretty pink icing.

    Serves: 5 

    • Cupcakes
    • 2 cups (250g) plain flour
    • 1/3 cup (90g) caster sugar
    • 1 teaspoon vanilla essence
    • 1 teaspoon baking powder
    • 2 eggs
    • 60g butter
    • 1 cup (250ml) milk
    • 1 pinch salt, to taste
    • strawberry jam
    • Icing
    • 3/4 cup (125g) icing sugar
    • 60g butter, softened
    • 1 tablespoon milk
    • 1 teaspoon red food colouring

    1. Cupcakes: Preheat oven to 180 degrees C. Line a muffin tray with patty pans or muffin cases.
    2. In a bowl mix the flour, baking powder and sugar. In another bowl mix the butter, eggs and vanilla then pour the milk in and stir.
    3. Pour the liquid mixture into the dry one. Lightly stir the batter just enough to mix the two. The batter should not be mixed for too long.
    4. Half fill the cases with the batter then add a teaspoon of jam and cover with batter. Be careful not to fill the cases more than 2/3.
    5. Bake in the oven for 12-15 minutes or until cooked. Cool the cakes before icing.
    6. Buttercream: Sprinkle the icing sugar over the soft butter and whisk.
    7. Add the milk and then the red food colouring until the desired shade. Use the buttercream to cover and decorate the muffins.

    The jam gives the muffins plenty of flavour on its own, so I didn't need to use any icing.  -  04 Oct 2010  (Review from Allrecipes UK & Ireland)


    Batter very runny but baked beautifully, only downside was the jam fell to the bottom causing a big gooey mess in the cupcake case. I made a second batch but this time put jam in them after they were baked and were lovely. Even put some chocolate spread in others  -  14 Feb 2016  (Review from Allrecipes UK & Ireland)
