Freshly whisked eggs fried over high heat until cooked though then topped with a creamy feta mixture. This omelette makes a delicious breakfast or quick lunch.
This is a great base recipe - try experimenting with additions. Diced tomatoes and Kalamata olives, spring onion and dill or spinach and diced sausage are all good places to start!
