Easy Feta Omelette

Freshly whisked eggs fried over high heat until cooked though then topped with a creamy feta mixture. This omelette makes a delicious breakfast or quick lunch.

Serves: 2 

  • 4 eggs, whisked
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon skim milk
  • 1 tablespoon vegetable oil

  1. In a small bowl, whisk eggs and pepper together. In another small bowl, combine crumbled cheese with milk.
  2. Heat oil in a large non-stick frying pan over medium-high heat. Pour in eggs and tilt pan until bottom is evenly covered. When edges appear cooked, place feta mixture in a line in the centre of eggs. Using a metal spatula, fold eggs over top and bottom of cheese then fold sides over.


This is a great base recipe - try experimenting with additions. Diced tomatoes and Kalamata olives, spring onion and dill or spinach and diced sausage are all good places to start!
