Pecan and Maple Muffins

    These muffins have a great flavour combination of toasted pecans and maple syrup. They are ideal for work lunches and picnics.

    Serves: 3 

    • 1 cup (125g) plain flour
    • 40g caster sugar
    • 1 1/2 teaspoons baking powder
    • 1 teaspoon salt
    • 80ml milk
    • 25ml oil
    • 1 egg
    • 4 tablespoons maple syrup
    • 100g toasted pecans, chopped

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 200 degrees C.
    2. In a bowl mix the flour, sugar, baking powder and salt together.
    3. In another bowl mix the milk, oil, egg and maple syrup. Add the chopped toasted pecans.
    4. Pour the wet mixture into the dry mixture and lightly stir.
    5. Bake in the oven for 15 minutes.

    Great recipe, a few too many nuts for me but my mum loved them. Small batch recipe which is great as there is only 3 of us at home and it gets boring to eat the same every day.     I made these the other day following this exact recipe and they turned out delicious! Only difference was I didn't have caster sugar so I used regular but they turned out great! My mum and dad loved them too! So amazing that I'm about to make some more and enter them into the Bake Off we're doing at work.
