    These muffins have a great flavour combination of toasted pecans and maple syrup. They are ideal for work lunches and picnics.

    Serves: 3 

    • 1 cup (125g) plain flour
    • 40g caster sugar
    • 1 1/2 teaspoons baking powder
    • 1 teaspoon salt
    • 80ml milk
    • 25ml oil
    • 1 egg
    • 4 tablespoons maple syrup
    • 100g toasted pecans, chopped

    1. Preheat oven to 200 degrees C.
    2. In a bowl mix the flour, sugar, baking powder and salt together.
    3. In another bowl mix the milk, oil, egg and maple syrup. Add the chopped toasted pecans.
    4. Pour the wet mixture into the dry mixture and lightly stir.
    5. Bake in the oven for 15 minutes.
