Veal and Lentil Soup

This is an easy meat based with lentils and chickpeas soup that is made in a pressure cooker so is fast and it tastes great.


Serves: 6 

  • 500g veal, cut into cubes
  • 200g chickpeas, rinsed and drained
  • 300g lentils, rinsed
  • 2 onions, diced
  • 1 garlic clove, crushed
  • 2 carrots, diced
  • 650g tomatoes, diced
  • 1 red capsicum, diced
  • 50g parsley, diced
  • 50g coriander, diced
  • 1 pinch salt and pepper, to taste
  • 1 1/2 litres water or stock or a mix of both

Preparation:15min  ›  Cook:35min  ›  Ready in:50min 

  1. Add all ingredients into a pressure cooker. Mix well.
  2. Pour the liquid over the ingredients. Season with salt and pepper. Put the lid on the pressure cooker and seal. Cook for 35 minutes after it comes to pressure.

Husband loved it. I thought it was enjoyable for a throw everything in the pot kind of meal. Didn't have fresh herbs or chickpeas so just used dried parsley and a can of white beans. Nice appearance. Didn't have to blend it. - 20 Jul 2013
