Sometimes you just need something a little different, well why not mash your carrots? Boiled in chicken stock and with onions these mashed carrots make a great side.
1 onion, diced
1 1/2 kg carrots, sliced
600ml chicken stock
1 pinch salt and pepper, to taste
- Add 20g of butter to a saucepan and saute the onion for several minutes.
- Add the carrots and stock. Simmer over low heat for approximately 20 minutes.
- Drain the carrots. Return to the saucepan then add remaining butter then quickly mash to a puree.
- Season with salt and pepper.
