    Sometimes you just need something a little different, well why not mash your carrots? Boiled in chicken stock and with onions these mashed carrots make a great side.

    Serves: 4 

    • 80g butter
    • 1 onion, diced
    • 1 1/2 kg carrots, sliced
    • 600ml chicken stock
    • 1 pinch salt and pepper, to taste

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Add 20g of butter to a saucepan and saute the onion for several minutes.
    2. Add the carrots and stock. Simmer over low heat for approximately 20 minutes.
    3. Drain the carrots. Return to the saucepan then add remaining butter then quickly mash to a puree.
    4. Season with salt and pepper.
