Fruit Salad with Maple Syrup

    I love a good fruit salad but sometimes they can seem a little bit plain, maple syrup is added to this dessert to make it that little bit special.

    Serves: 6 

    • 1 pineapple
    • 250g blueberries
    • 500g raspberries
    • 100g red grape, seedless
    • 2 tablespoons maple syrup
    • 2 tablespoons vanilla essence
    • 6 fresh mint leaves

    Preparation:15min  ›  Extra time:30min chilling  ›  Ready in:45min 

    1. Cut the pineapple into 8 slices and then remove the fibrous core.
    2. Cut away the skin and cut into large chunks.
    3. Mix the pineapple with the blueberries, raspberries and grapes in a large bowl.
    4. Pour the maple syrup and vanilla essence over the fruit.
    5. Mix well but try not to crush or mash the fruit while mixing.
    6. Refrigerate for at least 30 minutes.
    7. Add the fresh mint leaves just before serving.
