This is a very simple but great sponge cake perfect for any occasion. Serve it with homemade jam, whipped cream, ice cream, fresh fruit, hot chocolate, keep for breakfast or just as is...


Serves: 6 

  • 4 eggs
  • caster sugar, same weight as the eggs
  • plain flour, same weight as the eggs
  • salted butter, same weight as the eggs
  • 1/2 teaspoon baking powder
  • 1 pinch salt, to taste

  1. Preheat the oven to 200 degrees C.
  2. Remove the butter from the refrigerator and set aside until soft.
  3. Separate the yolks from the whites. Put the yolks in a food processor bowl and add the sugar. Whisk the yolks and sugar until white. Mix for about 5 minutes.
  4. Add the sifted flour and baking powder then mix. Add the softened butter, mix well.
  5. In a new bowl add a pinch of salt and the egg whites then whisk until stiff. With a spatula, gently add the egg whites to the batter.
  6. Pour the batter into a round silicone cake tin. Bake in the oven for 30 minutes or until golden brown.
  7. Remove from the oven then remove the cake from the cake tin.
