This is a delicious smoked salmon salad that is accompanied by pistachio and cashew nuts making it very healthy.


Serves: 4 

  • 80g baby spinach
  • 4 slices smoked salmon or 1 per person
  • 100g cherry tomatoes
  • 50g pistachios, roasted and salted
  • 50g cashews, roasted and salted
  • 1 lemon, juice only

Preparation:10min  ›  Ready in:10min 

  1. Add 1/4 of the spinach to each serving plate.
  2. Add the cherry tomatoes, cashew and pistachio nuts to each plate.
  3. Cut the smoked salmon into bite size pieces and add to each plate.
  4. Dress each plate with lemon juice. Serve chilled.
