Baked Fruit in Batter

This is based on a French 'clafoutis' that traditionally has cherries baked in a pancake batter in the oven; this is a tasty version that uses a wide range of fruit.


Serves: 8 

  • 75g plain flour
  • 3 eggs
  • 1/2 cup (125g) caster sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon rum, optional
  • 1 pinch salt, to taste
  • 2 teaspoons softened butter
  • 1 cup (250ml) full-fat milk
  • 500g Apricots, cherries, sour plums, prunes, apples or other fruit

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Preheat oven to 180 degrees C.
  2. Pour into a mixer bowl the flour, eggs, sugar, vanilla, rum, salt, butter and milk then beat.
  3. Pour about one tablespoon of batter into a buttered baking dish and then add the fruit cut into pieces with the skin on top.
  4. Pour the remaining batter on top of the fruit.
  5. Bake for 30 minutes then turn the oven off.
  6. I sprinkle a little bit of icing sugar and serve it as is.
