Chocolate Cream Cupcakes

Chocolate is on and in these cupcakes and cream is on and in them too. The perfect chocolate and cream combination for a special afternoon tea with friends.


Serves: 12 

  • 80g unsweetened cocoa powder
  • 180ml hot water
  • 2 1/2 cups (310g) plain flour
  • 1 pinch salt, to taste
  • 1 tablespoon baking powder
  • 115ml milk
  • 115ml cream
  • 260g butter
  • 1 1/4 cups (250g) caster sugar
  • 4 eggs
  • 100ml whipped cream
  • 12 chocolate squares or similar, for decoration

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat the oven to 180 degrees C. Line a cupcake tray with patty pans.
  2. In a bowl mix the cocoa powder with hot water.
  3. In a second bowl mix the plain flour with salt and baking powder.
  4. In a third bowl mix the milk and cream.
  5. In a fourth bowl put the butter and sugar then place in the microwave for 30 seconds or until melted. Mix in bowl three's cream mixture. Add the eggs one at a time stirring well after each egg.
  6. To the fourth bowl add half of bowl one's cocoa mixture then half of bowl two's flour mixture then the remaining cocoa and remaining flour.
  7. Fill the patty pans 2/3 full and bake for 15 minutes in the preheated oven.
  8. Once cooked top each cupcake with the whipped cream and a chocolate square.

I was surprised with the quantity of cocoa, that's 1 1/4 cups, but the flavour was fabulous. Not too chocolaty, not too sweet. The kids loved them, and loved making them. I needed them light & fluffy for all the kids so used the mixmaster. I can't wait to make them the way the recipe says (I'm assuming it's more like a mud cupcake) but that will be the adult version! Something else. I creamed the butter & sugar till light & fluffy, then added eggs one at a time beating in between each egg, then beat in cream, then milk. Gotta love that Mixmaster! This made for light fluffy cupcakes..... 30 of them! Following the recipe probably makes chocolate mud cupcakes, I'll try that next time... and there will be a next time! - 22 Oct 2010
