Cheese and Onion Omelette

I like to mix my omelettes up with lots of flavours but I always come back to this simple but tasty cheese and onion omelette. Try it with different cheeses.


Serves: 4 

  • 8 eggs
  • 1 onion, diced
  • 50g grated Comté or similar cheese
  • 1 tablespoon water
  • 2 tablespoons olive oil

Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Add the olive oil to a non-stick frying pan.
  2. Heat the oil over medium heat and add the onion to the frying pan. Cook the onion for about 10 minutes or until brown.
  3. Meanwhile, whisk the eggs in a bowl adding the tablespoon of water.
  4. Add the egg mixture to the frying pan with the onion over high heat.
  5. Take a wooden spoon and bring the edges of the omelette toward the centre of the frying pan; the liquid part will move towards the edges of the frying pan and cook.
  6. Repeat several times until you no longer have any liquid. Reduce to low heat.
  7. Cook for 5 to 10 minutes total depending how you like your omelette (5 minutes if you like it runny, 10 minutes for a well done).
