This is a lovely sweet coulis that is easy and quick to make, I like to eat it over ice cream or with fresh pancakes.


Serves: 10 

  • 1kg blackberries
  • 150g caster sugar
  • 20g vanilla sugar or 2 teaspoons vanilla essence

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. In a saucepan cook the blackberries, sugar and vanilla over low heat for about 30 minutes stirring from time to time to make sure the mixture does not stick to the saucepan.
  2. Mix with a blender if you like a smooth coulis but I prefer it with chunks.
