Beef and Beer Stew

    This is a easy and cheap but hearty stew requiring only a few ingredients, the most important of which is beer.

    Serves: 4 

    • 60g butter
    • 1kg casserole steak, cut into long strips
    • 1 pinch salt and pepper, to taste
    • 2 onions, sliced
    • 1 teaspoon ground nutmeg
    • 1 tablespoon plain flour
    • 100ml beef stock
    • 5 carrots, sliced
    • 600ml beer

    1. Melt the butter in a large saucepan and saute the meat. Season with salt and pepper. Remove from heat and set aside.
    2. Cook the onions for a few minutes over medium heat until brown stirring constantly. Add salt, pepper, nutmeg and flour.
    3. Cook for 1 more minute stirring constantly. Add the stock, bring to the boil and deglaze the bottom of the saucepan.
    4. Add the meat, carrots and beer.
    5. Cover and simmer for about 2 hours 15 minutes until the meat is very tender.

    I added Garlic with the onions, a touch of Worcestershire sauce at some stage, about two tea spoons of caster sugar and cornflour . Was fantastic.  -  23 Nov 2014


    Something else. There are only two of us so I altered the amount of carrots. The real reason for TWEAKING is that I used Baxter's French Onion Soup and a small can of Guinness. I also added mushrooms. Did not add salt. It was DELICIOUS!  -  18 Nov 2010  (Review from Allrecipes UK & Ireland)
