Spinach and Ricotta Triangles

    These are a quick and easy finger food; filo triangles are filled with a spinach and ricotta then baked in an oven. They have Greek origins as a 'Spanakopita' where feta is used in lieu of ricotta cheese.

    Serves: 4 

    • 250g ricotta cheese
    • 250g frozen spinach, thawed
    • 2 eggs
    • 2 teaspoons dried basil
    • 1 pinch salt and pepper, to taste
    • 2 tablespoons olive oil
    • 200g filo pastry sheets

    Preparation:20min  ›  Cook:20min  ›  Ready in:40min 

    1. Preheat oven to 180 degrees C.
    2. Mix the ricotta cheese, drained spinach, eggs, basil, salt and pepper.
    3. Lay a filo sheet on a work surface then place a spoonful of the spinach and cheese mixture on it and fold into a triangle. Continue with the remaining ingredients.
    4. Put the triangle in a baking dish and brush with olive oil.
    5. Bake for 20 minutes.

    I used puff pastry instead of FILO pastry! Also added chopped kabana, sin dried tomato and spring onion! Delicious!  -  25 Feb 2014


    Very nice. I also added roasted almond slivers inside the filo and sesame seeds on top. Will definitely cook this again  -  17 Jul 2014
