These are a quick and easy finger food; filo triangles are filled with a spinach and ricotta then baked in an oven. They have Greek origins as a 'Spanakopita' where feta is used in lieu of ricotta cheese.

I used puff pastry instead of FILO pastry! Also added chopped kabana, sin dried tomato and spring onion! Delicious! - 25 Feb 2014
