Simplicity is best in this side dish of baked zucchini and basil with olive oil. Serve warm with your favourite fish, chicken or steak.


Serves: 4 

  • 1 large zucchini, cut into thin slices
  • 2 tablespoons olive oil, to taste
  • 1 pinch salt and freshly ground black pepper, to taste
  • basil, diced, to taste

  1. Preheat oven to 200 degrees C.
  2. Mix zucchini with olive oil and spread on a greased baking tray with high edges, in as thin a layer as possible.
  3. Bake for 20-25 minutes until the zucchini is cooked and lightly browned at the edges turning from time to time. The zucchini pieces should not fall apart.
  4. Mix the cooled zucchini with salt and pepper then sprinkle with basil. Drizzle with a little extra olive oil to taste.
