Maple Syrup Waffles

    We have all had waffles with maple syrup on them but this goes one step further and has the maple syrup in them.

    Serves: 8 

    • 100g butter, softened
    • 6 tablespoons maple syrup
    • 4 eggs
    • 1 teaspoon vanilla essence
    • 1 1/4 cups (155g) flour
    • 1/2 cup (60g) cornflour
    • 1 teaspoon baking powder
    • 3/4 (90g) almond, meal
    • 200ml cream
    • 1 pinch salt, to taste

    1. Beat the butter until fluffy. Add the maple syrup.
    2. Separate the eggs. Mix the yolks with the butter and vanilla until frothy.
    3. Mix the flour, cornflour and baking powder. Mix the almond meal and cream. Work all of this with the yolk mixture with an electric mixer into a smooth mixture.
    4. Whisk egg whites with salt and fold into the batter.
    5. Cook in portions in a preheated and greased waffle iron until golden brown.
