Kids love pasta and this is a simple one I like to make them when we get home from school, I let them pick which pasta we use and they think they are great chefs.

    1 person made this

    • 2 tablespoons olive oil
    • 1 onion, coarsely diced
    • 2 cloves garlic, finely diced
    • 1-2 tablespoons tomato paste
    • 1 (800g) tin peeled tomatoes
    • 1 handful basil, finely sliced
    • 2 tablespoons butter
    • 50ml thickened cream
    • 1 pinch salt and freshly ground black pepper, to taste
    • 200g mozzarella, grated

    1. Heat olive oil over a medium heat and sweat the onions in it for about 10 minutes. After 5 minutes add the garlic.
    2. Add the tomato paste and the tinned tomatoes; increase the heat and bring to the boil. Reduce the temperature and simmer for 10 minutes. Add the basil and stir.
    3. Stir in 2 tablespoons of butter. Leave to simmer for a while then add cream.
    4. Season with salt and pepper. Finally sprinkle the mozzarella on top and allow to melt a bit then serve with the pasta of your choice.
